In a mixing bowl, whisk together the heavy cream, granulated sugar, and vanilla extract until well combined.

In a separate bowl, beat the egg yolks until smooth.

Slowly pour the cream mixture into the beaten egg yolks, whisking constantly.

Strain the mixture through a fine-mesh sieve to remove any lumps.

Divide the mixture evenly among four ramekins.

Place the ramekins in the slow cooker and pour enough hot water into the slow cooker to reach halfway up the sides of the ramekins.

Cover the slow cooker and cook on low heat for 3 hours.

Carefully remove the ramekins from the slow cooker and let them cool to room temperature.

Refrigerate the creme brulee for at least 1 hour to set.

Sprinkle 1 tablespoon of granulated sugar over the top of each creme brulee.

Use a kitchen torch to caramelize the sugar until it forms a crispy crust.
