  1. Preheat the oven to 325°F (163°C).
  2. In a saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat.
  3. In a mixing bowl, whisk together the granulated sugar and vanilla extract.
  4. Gradually pour the hot cream into the sugar mixture, whisking constantly.
  5. In a separate bowl, beat the egg yolks until smooth.
  6. Slowly pour the cream mixture into the beaten egg yolks, whisking constantly.
  7. Divide the mixture between two ramekins.
  8. Place the ramekins in a baking dish and fill the dish with hot water halfway up the sides of the ramekins.
  9. Bake for 30-35 minutes or until the custard is set around the edges but still slightly jiggly in the center.
  10. Remove the ramekins from the water bath and let them cool to room temperature.
  11. Transfer the ramekins to the refrigerator and let them chill for at least 2 hours.
  12. Just before serving, sprinkle each ramekin with a tablespoon of brown sugar and use a kitchen torch to caramelize the sugar until golden and crispy.
  13. Serve immediately.
