Creme Brulee is a classic French dessert that literally translates to ‘burnt cream’. The caramelized sugar topping is a signature feature of this delicious custard.

  1. Preheat the oven to 325°F (163°C).
  2. In a saucepan, heat the heavy cream, 1/4 cup granulated sugar, and vanilla extract over medium heat until hot but not boiling.
  3. In a separate bowl, whisk the egg yolks and 1/4 cup granulated sugar until well combined.
  4. Slowly pour the hot cream mixture into the egg yolk mixture, whisking constantly.
  5. Strain the mixture through a fine-mesh sieve into a pouring jug.
  6. Divide the mixture among four ramekins.
  7. Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
  8. Bake for 30-40 minutes, or until the edges are set but the center still jiggles slightly.
  9. Remove the ramekins from the water bath and let them cool to room temperature.
  10. Refrigerate for at least 2 hours, or overnight, to allow the custard to set.
  11. Just before serving, sprinkle about 1/2 tablespoon of granulated sugar evenly over each custard.
  12. Use a kitchen torch to caramelize the sugar until golden and bubbly.
  13. Let the brûlées sit for a few minutes to allow the sugar to harden, then serve immediately.
