Creme Brulee is a classic French dessert that literally translates to ‘burnt cream’. The caramelized sugar topping is a signature feature of this delicious custard.

Preheat the oven to 325°F (163°C).

In a saucepan, heat the heavy cream, 1/4 cup granulated sugar, and vanilla extract over medium heat until hot but not boiling.

In a separate bowl, whisk the egg yolks and 1/4 cup granulated sugar until well combined.

Slowly pour the hot cream mixture into the egg yolk mixture, whisking constantly.

Strain the mixture through a fine-mesh sieve into a pouring jug.

Divide the mixture among four ramekins.

Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.

Bake for 30-40 minutes, or until the edges are set but the center still jiggles slightly.

Remove the ramekins from the water bath and let them cool to room temperature.

Refrigerate for at least 2 hours, or overnight, to allow the custard to set.

Just before serving, sprinkle about 1/2 tablespoon of granulated sugar evenly over each custard.

Use a kitchen torch to caramelize the sugar until golden and bubbly.

Let the brûlées sit for a few minutes to allow the sugar to harden, then serve immediately.
