  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pie crust and line a pie dish with it.
  3. Peel and slice the pears, then place them in a large bowl.
  4. In a separate bowl, mix together the sugar, cornstarch, cinnamon, nutmeg, and salt.
  5. Add the dry mixture to the sliced pears and toss to coat evenly.
  6. Pour the pear mixture into the pie crust.
  7. In a small saucepan, heat the heavy cream and vanilla extract until steaming.
  8. In a separate bowl, whisk the egg yolks.
  9. Slowly pour the heated cream into the egg yolks while whisking continuously.
  10. Pour the custard mixture over the pears in the pie crust.
  11. Bake the pie for 40-45 minutes, or until the crust is golden and the filling is set.
  12. Allow the pie to cool for at least 30 minutes before serving.
  13. Serve the creamy pear pie with whipped cream or vanilla ice cream, if desired.
