In a bowl, combine graham cracker crumbs, shredded coconut, chopped walnuts, melted butter, granulated sugar, cocoa powder, beaten egg, and vanilla extract. Press the mixture into the bottom of a greased 9x9-inch baking dish.

In a separate bowl, whisk together heavy cream and vanilla pudding mix until thickened. Spread the mixture over the crust.

In a small saucepan, melt the chopped semi-sweet chocolate and unsalted butter over low heat. Once melted, pour the chocolate mixture over the vanilla pudding layer.

Refrigerate the bars for at least 2 hours, or until set.
