  1. Preheat the oven to 325°F (165°C).
  2. In a saucepan, combine the milk, heavy cream, sugar, dried lavender flowers, and vanilla extract. Heat over medium heat until it starts to simmer. Remove from heat and let it steep for 10 minutes.
  3. In a separate bowl, whisk the eggs until well beaten. Slowly pour the warm milk mixture into the eggs while whisking continuously.
  4. Strain the mixture through a fine-mesh sieve to remove any solids.
  5. Divide the mixture evenly among 6 ramekins or custard cups.
  6. Place the ramekins in a baking dish and pour hot water into the dish until it reaches halfway up the sides of the ramekins.
  7. Carefully transfer the baking dish to the preheated oven and bake for 35-40 minutes, or until the flan is set around the edges but still slightly jiggly in the center.
  8. Remove the baking dish from the oven and let the flan cool in the water bath for 10 minutes.
  9. Remove the ramekins from the water bath and let them cool to room temperature.
  10. Once cooled, cover the ramekins with plastic wrap and refrigerate for at least 2 hours, or overnight, to allow the flan to set completely.
  11. Before serving, garnish with lavender buds if desired. Enjoy!
