In a large pot, melt butter over medium heat. Add chopped onion and minced garlic, sauté until onion is translucent.

Add corn kernels and diced potato to the pot. Stir and cook for 5 minutes.

Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes, or until the potato is tender.

Use an immersion blender or transfer the mixture to a blender, blend until smooth.

Return the soup to the pot, stir in heavy cream, salt, and black pepper. Simmer for another 5 minutes.
