Creamy Chocolate-Filled Cupcakes

Preheat the oven to 350°F (175°C). Line a cupcake pan with paper liners.

In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.

In a separate large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.

Gradually mix in the dry ingredients, alternating with the milk. Begin and end with the dry ingredients. Mix until just blended.

Fill each cupcake liner halfway with the batter. Place a few chocolate chips in the center of each cupcake, then cover with more batter until the liners are about 2/3 full.

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

Remove cupcakes from the oven and let them cool in the pan for 5 minutes. Then transfer them to a wire rack to cool completely.

In a small saucepan, heat the heavy cream until it starts to simmer. Remove from heat and pour over the chocolate chips in a heatproof bowl. Let it sit for 2-3 minutes, then stir until smooth.

Let the chocolate ganache cool for about 15 minutes, then transfer it to a piping bag fitted with a small round tip.

Insert the tip into the center of each cupcake and squeeze gently to fill with the chocolate ganache.

In a separate bowl, sift the powdered sugar. Roll the filled cupcakes in the powdered sugar to coat.

Garnish with sprinkles as desired.

Allow the cupcakes to rest for 30 minutes before serving. Enjoy!
