Creamy Broccoli and Cheddar Soup

In a large pot, melt the butter over medium heat. Add the onion and garlic, and sauté until softened.

Add the flour and cook for 1-2 minutes, stirring constantly.

Gradually whisk in the vegetable stock and milk, then add the broccoli. Bring to a simmer and cook until the broccoli is tender.

Use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer the soup to a blender and blend until smooth.

Return the soup to the pot and stir in the cheddar cheese until melted and creamy. Season with salt and black pepper.
