  1. Preheat the oven to 325°F (163°C).
  2. In a small bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan.
  3. In a large mixing bowl, beat the cream cheese and sugar until smooth. Add the sour cream and vanilla extract, and mix well.
  4. Add the eggs, one at a time, beating well after each addition.
  5. Gently fold in the mandarin oranges, crushed pineapple, and shredded coconut.
  6. Pour the mixture over the crust in the springform pan.
  7. Bake for 55-60 minutes, or until the center is set.
  8. Remove from the oven and let cool in the pan for 10 minutes.
  9. Run a knife around the edge of the pan to loosen the cheesecake.
  10. Remove the sides of the springform pan and let the cheesecake cool completely.
  11. Refrigerate for at least 2 hours, or overnight.
  12. Before serving, top with whipped cream and garnish with maraschino cherries.
