Creamy Ambrosia Cheesecake
Ambrosia is a traditional fruit salad made with orange segments, pineapple, coconut, and sometimes other fruits. This cheesecake combines the flavors of ambrosia with a creamy and rich cheesecake base.

Preheat the oven to 325°F (163°C).

In a small bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan.

In a large mixing bowl, beat the cream cheese and sugar until smooth. Add the sour cream and vanilla extract, and mix well.

Add the eggs, one at a time, beating well after each addition.

Gently fold in the mandarin oranges, crushed pineapple, and shredded coconut.

Pour the mixture over the crust in the springform pan.

Bake for 55-60 minutes, or until the center is set.

Remove from the oven and let cool in the pan for 10 minutes.

Run a knife around the edge of the pan to loosen the cheesecake.

Remove the sides of the springform pan and let the cheesecake cool completely.

Refrigerate for at least 2 hours, or overnight.

Before serving, top with whipped cream and garnish with maraschino cherries.
