Cream of Yam and Spinach Soup

Peel and chop the yam into small cubes.

In a large pot, melt the butter over medium heat.

Add the chopped onion and minced garlic to the pot and sauté until translucent.

Add the yam cubes and vegetable broth to the pot. Bring to a boil and let it simmer until the yams are cooked through.

Add the spinach to the pot and cook until wilted.

Using an immersion blender or a regular blender, blend the soup until smooth.

Return the soup to the pot and stir in the heavy cream. Season with salt and black pepper.
