  3. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 15 minutes.
  4. Remove the pot from the heat and let it cool slightly. Using an immersion blender or regular blender, puree the soup until smooth.
  5. Return the soup to low heat and stir in the heavy cream. Cook for an additional 5 minutes, stirring occasionally.
  6. Stir in the lemon juice and adjust the seasoning if needed.
  7. Serve the soup hot, garnished with chopped chives.
