Preheat the oven to 350°F (175°C).

In a large skillet, heat olive oil over medium heat. Add onion and garlic, and sauté until onion is translucent.

Add broccoli, cauliflower, and carrots to the skillet. Sauté for 5 minutes until vegetables are slightly tender.

In a separate bowl, mix cream cheese and milk until smooth.

Add the cream cheese mixture to the skillet and stir until vegetables are evenly coated.

Transfer the mixture to a greased casserole dish.

Sprinkle cheddar cheese, salt, and pepper over the top.

In a small bowl, combine breadcrumbs and melted butter. Sprinkle the breadcrumb mixture over the cheese.

Bake for 30-35 minutes, or until the casserole is bubbly and the top is golden brown.
