In a mixing bowl, cream together the cream cheese, butter, sugar, and vanilla extract until smooth.

In a separate bowl, whisk together the flour, baking powder, and salt.

Gradually add the dry ingredients to the cream cheese mixture, mixing until well combined.

Divide the dough into two equal portions and shape each portion into a disk. Wrap in plastic wrap and refrigerate for at least 30 minutes.

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

On a lightly floured surface, roll out one portion of the dough to a thickness of about 1/4 inch.

Use cookie cutters to cut out desired shapes and transfer them to the prepared baking sheet.

Repeat with the remaining dough.

Bake for 10-12 minutes, or until the edges are lightly golden.

Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Once cooled, the cookies can be decorated with icing or enjoyed as is.
