  2. In another bowl, beat together cream cheese, powdered sugar, lemon zest, and lemon juice until creamy.
  3. Heat a non-stick skillet over medium heat. Pour 1/4 cup of the crepe batter into the skillet, swirling to evenly coat the bottom. Cook for about 2 minutes, until the edges are golden brown. Flip and cook for another 1-2 minutes. Repeat with the remaining batter.
  4. Spread a spoonful of the cream cheese mixture onto each crepe. Roll up the crepes and place them in a baking dish.
  5. Preheat the oven to 350°F (175°C).
  6. In a clean mixing bowl, beat the egg whites until foamy. Gradually add the sugar, cream of tartar, and vanilla extract. Continue beating until stiff peaks form.
