Cranberry Wheat Pancakes
Cranberries are native to North America and were used by Native Americans for their medicinal properties.

In a large bowl, whisk together the whole wheat flour, all-purpose flour, baking powder, and salt.

In a separate bowl, beat the egg and then stir in the milk, vegetable oil, honey, and vanilla extract.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Gently fold in the cranberries.

Heat a non-stick skillet or griddle over medium heat and lightly grease with oil or cooking spray.

Pour 1/4 cup of batter onto the skillet for each pancake.

Cook for 2-3 minutes, or until bubbles form on the surface.

Flip the pancakes and cook for an additional 2-3 minutes, or until golden brown.

Remove from the skillet and keep warm.

Repeat with the remaining batter.
