Preheat the oven to 400°F (200°C).

Wash the sweet potatoes and prick them with a fork.

Place the sweet potatoes on a baking sheet and bake for 45-60 minutes, or until they are tender.

While the sweet potatoes are baking, prepare the cranberry stuffing. In a small bowl, combine the dried cranberries, pecans, maple syrup, cinnamon, salt, and black pepper.

Once the sweet potatoes are cooked, remove them from the oven and let them cool slightly.

Cut a slit lengthwise in each sweet potato and gently scoop out some of the flesh to create a cavity.

Stuff each sweet potato with the cranberry mixture.

Place the stuffed sweet potatoes back in the oven for an additional 10-15 minutes, or until the cranberry stuffing is heated through.
