Cranberry Frosted Pistachio Cookies
Cranberries are native to North America and were used by Native Americans for their medicinal properties long before becoming a popular ingredient in cooking.

Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a medium bowl, whisk together the all-purpose flour, baking powder, and salt.

In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chopped dried cranberries and pistachios.

Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each cookie slightly with the back of a spoon.

Bake for 10-12 minutes, or until the edges are golden brown. Remove from the oven and let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

In a small bowl, whisk together the powdered sugar, milk, and green food coloring until smooth. Drizzle the frosting over the cooled cookies.
