Instructions

  1. Preheat the oven to 325°F (163°C). Grease a 9-inch (23 cm) springform pan.
  2. In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of the prepared pan.
  3. In a large bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the eggs, one at a time, beating well after each addition.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the cream cheese mixture, mixing until just combined.
  5. Pour half of the batter into the prepared crust. Spoon the cranberry sauce over the batter, spreading it out evenly. Top with the remaining batter.
  6. Bake for 45-50 minutes, or until the center is set and the edges are golden brown. Allow the cake to cool in the pan for 10 minutes, then remove the sides of the springform pan and let the cake cool completely.
  7. In a small saucepan, heat the fresh cranberries and powdered sugar over medium heat until the cranberries burst and release their juices. Remove from heat and let cool.
  8. Drizzle the cranberry sauce over the cooled cake. Refrigerate for at least 1 hour before serving.
  9. Serve chilled and enjoy!
