  1. Preheat the oven to 400°F (200°C).
  2. Wash the potatoes and prick them with a fork.
  3. Bake the potatoes for 45-60 minutes, until tender.
  4. While the potatoes are baking, cook the bacon until crispy. Crumble it into small pieces.
  5. Once the potatoes are done, let them cool slightly. Cut them in half lengthwise and scoop out the flesh, leaving a thin shell.
  6. In a bowl, mash the potato flesh with sour cream, butter, salt, and black pepper.
  7. Stir in the crumbled bacon, grated cheddar cheese, and chopped green onions.
  8. Spoon the mixture back into the potato shells.
  9. Place the stuffed potatoes on a baking sheet and bake for another 15 minutes, until the cheese is melted and bubbly.
  10. Serve hot and enjoy!
