Ingredients
Instructions
-
In a mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt.
-
Cut the unsalted butter into small pieces and add it to the dry ingredients. Use your fingers or a pastry cutter to blend the butter into the flour mixture until it resembles coarse crumbs.
-
In a separate bowl, whisk together the egg, milk, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined.
-
Gently fold in the cranberries and cherries.
-
In a saucepan, combine the brown sugar and water. Heat over medium heat until the sugar has dissolved, stirring occasionally.
-
Grease a pudding mold or a heatproof bowl with butter. Pour the brown sugar syrup into the bottom of the mold.
-
Spoon the pudding batter into the mold, spreading it evenly.
-
Cover the mold with aluminum foil and place it in a steamer or a large pot with a steaming rack.
-
Steam the pudding for 1 hour, or until a toothpick inserted into the center comes out clean.
-
Remove the pudding from the steamer and let it rest for 10 minutes.
-
Invert the pudding onto a serving plate, allowing the syrup to drizzle over the top.
-
Serve the Cranberry-Cherry Steamed Pudding warm.
