  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
  2. In a large bowl, combine the flour, sugar, baking powder, and salt.
  3. In a separate bowl, beat the egg. Stir in the milk, vegetable oil, orange zest, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Fold in the cranberries and chopped walnuts.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let it cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
  8. Slice and serve.
