  1. In a large bowl, combine the corn kernels, flour, cornmeal, baking powder, and salt.
  2. In a separate bowl, whisk together the egg and milk. Pour the egg mixture into the corn mixture and stir until well combined.
  3. Add the green onions and cilantro to the batter and mix well.
  4. Heat the vegetable oil in a large skillet over medium heat. Drop spoonfuls of the batter into the skillet and flatten slightly with the back of a spoon. Cook until golden brown on both sides, about 2-3 minutes per side.
  5. While the fritters are cooking, in a separate pan, heat the olive oil over medium heat. Add the cherry tomatoes and cook until slightly softened, about 3-4 minutes. Drizzle with balsamic vinegar and season with salt and pepper.
