Rinse the rice under cold water until the water runs clear.

In a large saucepan, heat the olive oil over medium heat. Add the onion, bell pepper, carrot, and garlic. Cook until the vegetables are tender, about 5 minutes.

Add the rice, cumin, coriander, salt, and black pepper to the saucepan. Stir to coat the rice with the spices.

Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.

Remove the saucepan from the heat and let the rice rest for 5 minutes. Fluff the rice with a fork.
