Collard Green Phyllo Triangles
Collard greens are a rich source of vitamins A, C, and K, as well as calcium and fiber.
This is vegetarian recipe. Dish can be prepared in 50 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 8.

Preheat the oven to 375°F (190°C).

Remove the stems from the collard green leaves and blanch them in boiling water for 1-2 minutes. Drain and set aside.

In a pan, heat olive oil over medium heat and sauté garlic until fragrant. Add sun-dried tomatoes and cook for another minute.

In a bowl, crumble feta cheese and mix it with the sautéed garlic and sun-dried tomatoes. Season with salt and black pepper.

Lay one sheet of phyllo dough on a clean surface. Brush it lightly with olive oil. Place another sheet of phyllo dough on top and repeat the process until all the sheets are stacked.

Cut the stacked phyllo dough into 4 equal strips.

Place a collard green leaf on each strip and spoon the feta cheese mixture onto the center of the leaf.

Fold the phyllo dough over the filling, starting from the bottom corner, to form a triangle. Continue folding until the entire strip is folded into a triangle.

Repeat the process with the remaining collard greens, phyllo dough, and filling.

Place the triangles on a baking sheet and brush the tops with olive oil.

Bake for 15-20 minutes, or until the phyllo dough is golden brown and crispy.
