Colcannon (Mashed Potatoes With Cabbage)
Colcannon is a traditional Irish dish often served on Halloween. It is believed that hiding a ring, coin, or thimble in the colcannon brings good luck to the person who finds it.

Peel and chop the potatoes into small chunks.

Place the potatoes in a large pot and cover with water. Add a pinch of salt and bring to a boil. Cook until the potatoes are tender, about 15-20 minutes.

While the potatoes are cooking, shred the cabbage.

In a separate pot, melt the butter over medium heat. Add the shredded cabbage and cook until softened, about 5 minutes.

Drain the potatoes and return them to the pot. Add the cooked cabbage, butter, and milk. Mash until smooth and well combined. Season with salt and pepper to taste.

Let the colcannon rest for 5 minutes before serving.
