Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. In a separate bowl, whisk together the coconut milk, vanilla extract, and egg. Pour the wet ingredients into the dry ingredients and stir until just combined. Turn the dough out onto a floured surface and gently knead a few times until it comes together. Pat the dough into a circle about 1-inch thick. Cut the dough into 8 wedges. Place the scones onto a baking sheet lined with parchment paper. Bake for 12-15 minutes or until lightly golden. Let the scones cool on a wire rack before serving.
