Preheat the oven to 350°F (175°C). Grease a loaf pan or line muffin cups with paper liners.

In a large bowl, combine the flour, baking powder, baking soda, and salt.

In a separate bowl, mix together the mashed bananas, sugar, melted butter, egg, and vanilla extract.

Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the shredded coconut and chopped walnuts.

Pour the batter into the prepared loaf pan or muffin cups.

Bake in the preheated oven for 45 minutes for a loaf or 20-25 minutes for muffins, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
