  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the sour cherries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Mix well and set aside.
  3. In a separate bowl, combine the all-purpose flour and salt. Cut in the unsalted butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. Add the ice water, one tablespoon at a time, and mix until the dough comes together. Divide the dough into two equal portions.
  5. Roll out one portion of the dough on a lightly floured surface to fit the bottom of a 9-inch pie dish. Place the rolled-out dough in the pie dish and trim any excess.
  6. Pour the cherry filling into the pie dish.
  7. Roll out the remaining portion of the dough and cut it into strips for the lattice crust. Arrange the strips in a lattice pattern over the cherry filling.
  8. Brush the lattice crust with the beaten egg and sprinkle turbinado sugar on top.
  9. Place the pie dish on a baking sheet and bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
