Citrus Fruit Cheesecake

Preheat the oven to 325°F (163°C).

Crush the graham crackers and mix with melted butter. Press the mixture into the bottom of a springform pan to form the crust.

In a mixing bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition.

Stir in lemon juice, orange juice, lime juice, and vanilla extract.

Pour the cream cheese mixture over the crust in the springform pan.

Bake for 40 minutes or until the center is set.

Remove from the oven and let it cool for 10 minutes.

Refrigerate for at least 2 hours.

Serve chilled with whipped cream and citrus zest on top.
