Churros are a traditional Spanish dessert usually enjoyed with a cup of hot chocolate. Combining the flavors of churros with a creamy cheesecake filling creates a delicious and unique dessert experience.

Preheat the oven to 350°F (175°C).

In a mixing bowl, beat cream cheese and sugar until smooth.

Add eggs one at a time, beating well after each addition.

Stir in vanilla extract.

In a separate bowl, whisk together flour, baking powder, and salt.

Gradually add the dry ingredients to the cream cheese mixture, mixing until just combined.

In a small saucepan, melt butter over medium heat.

Unroll one puff pastry sheet onto the bottom of a greased 9x13-inch baking dish.

Pour the cream cheese mixture over the puff pastry.

Place the second puff pastry sheet on top.

Brush the top with melted butter and sprinkle with cinnamon sugar.

Bake for 35-40 minutes or until golden brown.
