In a large bowl, cream together the chunky peanut butter, softened unsalted butter, granulated sugar, and brown sugar until smooth.

Beat in the egg and vanilla extract.

In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.

Fold in the semi-sweet chocolate chips and chopped peanuts.

Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
