Instructions

  1. In a medium bowl, whisk together the flour, ginger, cinnamon, baking soda, and salt.
  2. In a large bowl, beat the butter and sugar until creamy. Add the molasses and egg, and beat until well combined.
  3. Gradually add the dry ingredients to the wet ingredients, mixing well after each addition.
  4. Divide the dough into two equal portions, wrap in plastic wrap, and refrigerate for at least 1 hour.
  5. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  6. Roll out one portion of the dough on a lightly floured surface to about 1/4-inch thickness. Use a template or freehand to cut out the desired shapes for your cookie house.
  7. Transfer the cut-out shapes to the prepared baking sheet and bake for 10-12 minutes, or until lightly golden around the edges.
  8. Remove from the oven and let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  9. Repeat steps 6-8 with the remaining dough portion.
  10. Once the cookies are completely cooled, assemble the cookie house using royal icing as glue.
  11. Decorate the cookie house with assorted candies and decorations as desired.
  12. Allow the icing to set before serving or displaying the cookie house.
