Preheat the oven to 180°C (350°F).

Roll out the puff pastry sheets and cut them into strips.

Melt the dark chocolate and butter in a heatproof bowl over simmering water.

In a separate bowl, whisk together powdered sugar, egg yolk, and milk.

Add the melted chocolate mixture to the bowl and mix well.

Take one strip of puff pastry and spread the chocolate mixture on one side.

Roll the strip tightly, starting from one end.

Repeat with the remaining strips.

Place the rolled pastries on a baking sheet lined with parchment paper.

Brush the tops with milk and sprinkle almond flakes on top.

Bake for 20-25 minutes or until golden brown.

Allow the chocolate thistles to cool for 10 minutes before serving.
