  1. Preheat the oven to 350°F (175°C).
  2. Crush the chocolate cookies into fine crumbs and mix with melted butter. Press the mixture into the bottom of a springform pan to form the crust.
  3. In a mixing bowl, beat cream cheese, sugar, sour cream, and vanilla extract until smooth. Add eggs one at a time, mixing well after each addition.
  4. Pour the cream cheese mixture over the crust in the springform pan. Smooth the top and sprinkle with semi-sweet chocolate chips.
  5. Bake in the preheated oven for 40-45 minutes, or until the center is set.
  6. Remove from the oven and let it cool in the pan for 15 minutes. Then, transfer to a wire rack and let it cool completely.
  7. In a small saucepan, heat the heavy cream until it starts to boil. Remove from heat and stir in powdered sugar and cocoa powder until smooth.
  8. Pour the chocolate ganache over the cooled cheesecake, spreading it evenly.
  9. Refrigerate the cheesecake for at least 3 hours or overnight to set.
  10. Serve chilled and enjoy!
