Rhubarb is often referred to as the ‘pie plant’ because it is commonly used in pie fillings, but it also adds a unique tangy flavor to cookies.

Preheat the oven to 350°F (175°C).

In a mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.

Beat in the egg and vanilla extract.

In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking powder, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Fold in the chopped rhubarb and dark chocolate chips.

Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
