In a medium saucepan, heat the heavy cream, milk, and pumpkin puree over medium heat until it starts to simmer.

In a separate bowl, whisk together the egg yolks, sugar, vanilla extract, pumpkin pie spice, and salt.

Slowly pour the hot cream mixture into the egg yolk mixture, whisking constantly.

Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens slightly (about 5 minutes).

Remove from heat and add the chopped semi-sweet chocolate. Stir until the chocolate is completely melted and the mixture is smooth.

Strain the mixture through a fine-mesh sieve into a large measuring cup or bowl.

Divide the mixture evenly among four ramekins or small jars.

Place the ramekins in a baking dish and fill the dish with enough hot water to reach halfway up the sides of the ramekins.
