Chocolate nut balls are a great source of antioxidants from dark chocolate and protein from nuts.

Melt the dark chocolate in a heatproof bowl over simmering water.

In a food processor, pulse the mixed nuts until finely chopped.

Add the chopped nuts, honey, vanilla extract, and cocoa powder to the melted chocolate. Stir until well combined.

Place the mixture in the refrigerator for 30 minutes to firm up.

Once firm, roll the mixture into small balls using your hands.

Roll each ball in desiccated coconut to coat.

Place the chocolate nut balls in an airtight container and refrigerate for at least 1 hour before serving.
