Chocolate Mint Brownies

Preheat the oven to 350°F (175°C).

In a saucepan, melt the butter and dark chocolate over low heat. Stir until smooth and remove from heat.

In a mixing bowl, whisk the eggs and granulated sugar until well combined.

Gradually add the melted chocolate mixture to the egg mixture, stirring constantly.

Sift in the all-purpose flour and cocoa powder. Add the mint extract and salt. Mix until just combined.

Fold in the mint chocolate chips.

Pour the batter into a greased and lined baking dish.

Bake for 25 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
