Chocolate Guinness Cupcakes Recipe
The addition of Guinness beer gives these cupcakes a rich and moist texture, as well as a subtle hint of malt and bitterness.

Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.

In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.

In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.

Gradually add the dry ingredients to the butter mixture, alternating with the Guinness beer and sour cream. Mix until just combined.

Divide the batter evenly among the cupcake liners, filling each about 2/3 full.

Bake for 20-25 minutes or until a toothpick inserted into the center of a cupcake comes out clean.

Remove the cupcakes from the oven and let them cool in the tin for 10 minutes. Then transfer them to a wire rack to cool completely.

In a small saucepan, heat the heavy cream until it begins to simmer. Remove from heat and add the chocolate. Let it sit for a minute, then whisk until smooth. Let the ganache cool for about 10 minutes.

Once the ganache has cooled slightly, dip the tops of the cupcakes into the ganache, allowing any excess to drip off.

In a separate bowl, sift the powdered sugar. Dust the tops of the cupcakes with powdered sugar.
