  2. In a bowl, sift together the almond flour, powdered sugar, and cocoa powder.
  3. In a separate bowl, beat the egg whites until foamy. Gradually add the granulated sugar and continue beating until stiff peaks form.
  4. Gently fold the dry ingredients into the egg white mixture until well combined.
  5. Transfer the batter to a piping bag fitted with a round tip and pipe small circles onto the prepared baking sheet.
  6. Tap the baking sheet on the counter to remove any air bubbles and let the macaroons rest for 30 minutes.
  7. Bake for 12-15 minutes, or until the macaroons are set. Let them cool completely on the baking sheet.
  8. In a heatproof bowl, melt the dark chocolate over a double boiler.
  9. In a separate saucepan, heat the heavy cream until it just begins to simmer.
  10. Pour the hot cream over the melted chocolate and stir until smooth.
