Chocolate Ganache-Filled Macaroons
Macaroons are believed to have originated in Italy, but they gained popularity in France, where they are now a famous delicacy.
This is vegetarian and gluten free recipe. Dish can be prepared in 75 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 9.

Preheat the oven to 325°F (160°C) and line a baking sheet with parchment paper.

In a bowl, sift together the almond flour, powdered sugar, and cocoa powder.

In a separate bowl, beat the egg whites until foamy. Gradually add the granulated sugar and continue beating until stiff peaks form.

Gently fold the dry ingredients into the egg white mixture until well combined.

Transfer the batter to a piping bag fitted with a round tip and pipe small circles onto the prepared baking sheet.

Tap the baking sheet on the counter to remove any air bubbles and let the macaroons rest for 30 minutes.

Bake for 12-15 minutes, or until the macaroons are set. Let them cool completely on the baking sheet.

In a heatproof bowl, melt the dark chocolate over a double boiler.

In a separate saucepan, heat the heavy cream until it just begins to simmer.

Pour the hot cream over the melted chocolate and stir until smooth.

Add the butter and vanilla extract to the chocolate mixture and stir until well combined.

Let the ganache cool for 10-15 minutes.

Pair up the macaroons of similar size and pipe a dollop of ganache onto one macaroon.

Sandwich with another macaroon and gently press together.

Let the macaroons rest in the refrigerator for at least 1 hour before serving.
