Chocolate Fudge Cupcakes

Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.

In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.

In a separate large bowl, cream together the butter and granulated sugar until light and fluffy.

Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined.

Divide the batter evenly among the cupcake liners, filling each about 2/3 full.

Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.

Remove from the oven and let the cupcakes cool in the pan for 5 minutes. Then transfer them to a wire rack to cool completely.

In a small saucepan, heat the heavy cream until it just begins to simmer. Remove from heat and pour over the semi-sweet chocolate. Let it sit for a minute, then stir until smooth.

Allow the chocolate ganache to cool slightly, then dip the tops of the cupcakes into the ganache.

In a separate bowl, whisk together the powdered sugar and milk to make the frosting.

Once the ganache has set, pipe or spread the frosting onto the cupcakes.
