  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry sheet and cut it into 8 equal rectangles.
  3. Place the rectangles on a baking sheet lined with parchment paper and bake for 15-20 minutes or until golden brown.
  4. In a saucepan, heat 1 1/2 cups of milk over medium heat until it starts to simmer.
  5. In a separate bowl, whisk together the sugar, cornstarch, and remaining 1/2 cup of milk.
  6. Slowly pour the milk mixture into the saucepan, whisking constantly.
  7. Cook the mixture over medium heat, stirring constantly, until it thickens.
  8. Remove the saucepan from the heat and stir in the vanilla extract.
  9. Transfer the pastry cream to a bowl and cover with plastic wrap, pressing the plastic wrap directly onto the surface to prevent a skin from forming.
  10. Place the bowl in the refrigerator and let the pastry cream cool for at least 2 hours.
  11. In a separate bowl, whip the whipping cream until stiff peaks form.
  12. Fold the whipped cream into the cooled pastry cream.
  13. Cut the baked puff pastry rectangles in half horizontally.
  14. Spoon the cream mixture onto the bottom halves of the puff pastry rectangles.
  15. Place the top halves of the puff pastry rectangles on top of the cream mixture.
  16. In a microwave-safe bowl, melt the semi-sweet chocolate and butter together in 30-second intervals, stirring until smooth.
  17. Drizzle the melted chocolate over the assembled eclairs.
  18. Place the eclairs in the refrigerator and let them rest for at least 1 hour before serving.
  19. Serve chilled and enjoy!
