Chocolate Eclair Dessert
Ingredients
Instructions
-
Preheat the oven to 400°F (200°C).
-
Roll out the puff pastry sheet and cut it into 8 equal rectangles.
-
Place the rectangles on a baking sheet lined with parchment paper and bake for 15-20 minutes or until golden brown.
-
In a saucepan, heat 1 1/2 cups of milk over medium heat until it starts to simmer.
-
In a separate bowl, whisk together the sugar, cornstarch, and remaining 1/2 cup of milk.
-
Slowly pour the milk mixture into the saucepan, whisking constantly.
-
Cook the mixture over medium heat, stirring constantly, until it thickens.
-
Remove the saucepan from the heat and stir in the vanilla extract.
-
Transfer the pastry cream to a bowl and cover with plastic wrap, pressing the plastic wrap directly onto the surface to prevent a skin from forming.
-
Place the bowl in the refrigerator and let the pastry cream cool for at least 2 hours.
-
In a separate bowl, whip the whipping cream until stiff peaks form.
-
Fold the whipped cream into the cooled pastry cream.
-
Cut the baked puff pastry rectangles in half horizontally.
-
Spoon the cream mixture onto the bottom halves of the puff pastry rectangles.
-
Place the top halves of the puff pastry rectangles on top of the cream mixture.
-
In a microwave-safe bowl, melt the semi-sweet chocolate and butter together in 30-second intervals, stirring until smooth.
-
Drizzle the melted chocolate over the assembled eclairs.
-
Place the eclairs in the refrigerator and let them rest for at least 1 hour before serving.
-
Serve chilled and enjoy!
