Line a baking sheet with parchment paper.

Melt the dark chocolate in a heatproof bowl over simmering water. Stir in half of the peppermint extract.

Pour the melted dark chocolate onto the prepared baking sheet and spread it evenly.

Place the baking sheet in the refrigerator for 30 minutes to allow the dark chocolate to set.

Melt the white chocolate in a separate heatproof bowl over simmering water. Stir in the remaining peppermint extract.

Remove the baking sheet from the refrigerator and pour the melted white chocolate over the set dark chocolate layer.

Sprinkle crushed candy canes over the top.

Return the baking sheet to the refrigerator for another 30 minutes to allow the white chocolate layer to set.

Once set, break the bark into pieces and serve.
