In a large saucepan, combine sugar, honey, and water. Heat over medium heat until sugar is dissolved.

Increase the heat to high and bring the mixture to a boil. Continue boiling without stirring until the mixture reaches 300°F (150°C) on a candy thermometer.

Remove the saucepan from heat and quickly stir in the baking soda. The mixture will foam up.

Pour the foaming mixture onto a baking sheet lined with parchment paper. Allow it to cool and harden for about 1 hour.

Once the honeycomb brittle is completely cooled, break it into small pieces.

Melt the dark chocolate in a heatproof bowl set over simmering water.

Dip each piece of honeycomb brittle into the melted chocolate, coating it completely. Place the chocolate-dipped honeycomb brittle back on the parchment paper to set.

Allow the chocolate to harden completely before serving. Enjoy!
