  2. Increase the heat to high and bring the mixture to a boil. Continue boiling without stirring until the mixture reaches 300°F (150°C) on a candy thermometer.
  3. Remove the saucepan from heat and quickly stir in the baking soda. The mixture will foam up.
  4. Pour the foaming mixture onto a baking sheet lined with parchment paper. Allow it to cool and harden for about 1 hour.
  5. Once the honeycomb brittle is completely cooled, break it into small pieces.
  6. Melt the dark chocolate in a heatproof bowl set over simmering water.
  7. Dip each piece of honeycomb brittle into the melted chocolate, coating it completely. Place the chocolate-dipped honeycomb brittle back on the parchment paper to set.
  8. Allow the chocolate to harden completely before serving. Enjoy!
