Preheat the oven to 325°F (160°C) and line a baking sheet with parchment paper.

In a large mixing bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract, and salt. Mix until well combined.

In a separate bowl, beat the egg whites until frothy. Gradually add the granulated sugar and continue beating until stiff peaks form.

Gently fold the beaten egg whites into the coconut mixture until fully incorporated.

Using a cookie scoop or tablespoon, drop rounded mounds of the mixture onto the prepared baking sheet, spacing them about 1 inch apart.

Bake for 15-18 minutes, or until the macaroons are golden brown around the edges.

Remove from the oven and let the macaroons cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

In a microwave-safe bowl, melt the semi-sweet chocolate and vegetable oil in 30-second intervals, stirring until smooth.

Dip the bottom of each macaroon into the melted chocolate, then place them back on the wire rack to allow the chocolate to set.
