The Yule log cake, or Bûche de Noël, is a traditional French dessert served during Christmas. It is meant to resemble a log that would be burned in the fireplace on Christmas Eve.

  1. Preheat the oven to 180°C (350°F). Grease a baking sheet and line it with parchment paper.
  2. Melt the dark chocolate and butter in a heatproof bowl over simmering water. Stir until smooth and remove from heat.
  3. In a separate bowl, whisk together the sugar and eggs until pale and fluffy. Slowly pour in the melted chocolate mixture while whisking.
  4. Sift in the flour and cocoa powder, and gently fold until well combined.
  5. Pour the batter onto the prepared baking sheet and spread it evenly. Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
  6. While the cake is baking, whip the cream, powdered sugar, and vanilla extract together until stiff peaks form.
  7. Once the cake is done, remove it from the oven and let it cool for a few minutes. Then, transfer it to a clean kitchen towel and roll it up tightly. Let it cool completely.
  8. Unroll the cake and spread the chestnut puree evenly over the surface. Sprinkle with rum.
  9. Carefully roll the cake back up, starting from one end. Place it on a serving platter.
  10. Frost the outside of the cake with the whipped cream mixture.
  11. Use a fork to create a bark-like texture on the whipped cream.
  12. Decorate with meringue mushrooms, candied cherries, and fresh mint leaves.
  13. Refrigerate for at least 2 hours before serving.
  14. Slice and enjoy!
