Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a round cake pan.
  2. Crush the Oreo cookies into fine crumbs using a food processor or by placing them in a plastic bag and crushing with a rolling pin.
  3. In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  5. Fold in the crushed Oreo cookies and chocolate chips. Pour the batter into the prepared cake pan.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. In a small saucepan, heat the heavy cream until it begins to steam. Remove from heat and pour over the chocolate chips in a heatproof bowl. Let sit for 1 minute, then stir until smooth and creamy.
  8. Pour the chocolate ganache over the cooled cake, allowing it to drip down the sides. Sprinkle with sprinkles.
  9. Let the cake rest for at least 1 hour before serving to allow the ganache to set.
  10. Slice and serve the Chocolate Covered Oreo Cookie Cake.
