  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the cold cubed butter to the dry ingredients. Using your fingertips or a pastry cutter, cut the butter into the flour mixture until it resembles coarse crumbs.
  4. Stir in the chocolate chips and instant coffee granules.
  5. In a separate bowl, whisk together the milk, vanilla extract, and egg. Pour the wet ingredients into the dry ingredients and gently mix until just combined.
  6. Transfer the dough onto a lightly floured surface. Pat it into a circle about 1-inch thick. Cut the circle into 8 wedges.
  7. Place the scones onto the prepared baking sheet. Bake for 15-20 minutes or until golden brown.
  8. Remove from the oven and let the scones cool on a wire rack for about 10 minutes before serving.
