Preheat the oven to 350°F (175°C).

In a small bowl, whisk together the flour, baking soda, and salt.

In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.

Beat in the vanilla extract and egg until well combined.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Stir in the chocolate chips.

Drop rounded tablespoonfuls of dough onto a baking sheet lined with parchment paper.

Bake for 8-10 minutes, or until golden brown.

Allow the cookies to cool completely.

Once the cookies are cooled, scoop a generous amount of vanilla ice cream onto the bottom side of one cookie.

Place another cookie on top of the ice cream and gently press down to create a sandwich.

Repeat with the remaining cookies and ice cream.

Place the ice cream sandwiches in the freezer for at least 1 hour to firm up.
